How to Make Cabbage Palya/Stir Fried Cabbage at home

About Cabbage Palya:

This is a very simple, yet flevourful South Indian dish.  This is made with cabbage, coconut, flavoured with very minimum spices, and herbs.  This stir fried cabbaged goes well with steamed rice pairs with sambar, roti, or with plain paratha.  This is a very simple, healthy, and quick to make recipe.

Ingredients:

  • 2-3 tablespoon of cooking oil.
  • 2 whole dry red chillies.
  • 1/4th teaspoon hing (asafoetida).
  • 1/2 teaspoon mustard seeds.
  • 1 teaspoon chana dal (split Bengal gram).
  • 1/2 teaspoon Urad dal.
  • 3-4 slit green chillies or to taste.
  • 1 sprig of curry leaves.
  • 1 medium sized onion roughly chopped.
  • 1-1/2 cups of shredded cabbage (approximately 300 grams)
  • 1/2 teaspoon turmeric powder.
  • Salt to taste.
  • Finely chopped coriander leaves.
  • 2-3 tablespoons of grated coconut.

Note:  You may increase or decrease the quantity of ingredients depending on for how many people you are making for.

Method of Making Cabbage Palya:

  1.  Take a pan and turn on the flame.
  2.  When pan is hot, add 2-3 tablespoons of cooking oil.
  3.  When oil is hot, add 2 whole dry red chillies, 1/4th teaspoon hing, 1/2 teaspoon mustard seeds, 1 tablespoon chana dal, 1/2 teaspoon urad dal, 3-4 slit green chillies or to taste, and curry leaves.
  4.  Then, mix all the ingredients and saute them on a low flame until chana dala and urad dal turns light golden in color.
  5.  Then, add roughly chopped onions and saute on a medium flame until onion turns translucent.
  6.  Then, add shredded cabbage, turmeric powder, and salt to taste and mix well.
  7.  Then, cover the lid and cook the cabbage on a low to medium flame for 5-7 minutes or until cabbage is partially cooked, yet remains crunchy.  Stir occasionally.
  8.  Then, add grated coconut and some finely chopped coriander leaves and mix well.
  9.  Then, turn off the flame and transfer the cabbage palya into a serving bowl.
  10.  Serve this with roti, plain paratha, or with rice as a side dish.
