How to Make Chicken Lallipop at Home

About Chicken Lallipop:

Chicken lollipop is a popular Indo-Chinese dish.  Chicken lollipop is essentially a frenched chicken winglet, wherein the meat is cut loose from the bone end and pushed down creating a lollipop appearance.  Chicken lollipop is a deep fry recipe in which chicken lollipops are marinated with spices, then deep fried, and then toss with sauces.  This is a very famous recipe in India.  Chicken lollipop is usually served hot with Szechuan sauce.  Chicken lollipop is also known as Drums of Heaven.

Ingredients:

  • 500-600 grams of chicken winglet, wash, clean, cut and shape them into lollipops.
  • 2-3 tablespoons of corn starch.
  • 2-3 tablespoons of maida (refined flour).
  • Oil for deep frying.
  • 1 tablespoons of cooking oil/olive oil/sesame oil to make sauce.
  • 1 tablespoon of garlic ginger paste.
  • 1-2 eggs.
  • 2 tablespoons of dark soya sauce.
  • 2-3 tablespoons of Schezwan sauce.
  • 1-2 tablespoons of tomato ketchup.
  • Salt to taste.
  • 1/2 teaspoon sugar.
  • Some finely chopped green chillies to taste (Optional).
  • Red chilli powder to taste.
  • 1 tablespoon of white vinegar.
  • 1/2 tablespoon of finely chopped ginger.
  • 8-10 cloves of garlic finely chopped.
  • Some chopped spring onion greens for garnishing.
  • 1 small onion finely chopped.
  • Freshly grounded black pepper powder.
  • Water as required.

Note:  You may increase or decrease the quantity of ingredients depending on for how many people you are making for.

Marination of Chicken Lollipops:

  1.  Take a mixing bowl and add on the chicken lollipop pieces.
  2.  Then, add 1 tablespoon of dark soya sauce, salt to taste, 1/2 tablespoon white vinegar, and freshly grounded black pepper powder to taste and mix well.
  3.  Then, add 2 tablespoons of corn starch, 2 tablespoons of maida, red chilli powder to taste, and break in 1-2 eggs.
  4.  Then, mix all the ingredients well.
  5.  Then, keep the marinated chicken aside for 20-30 minutes.

Deep Frying of Chicken Lollipops:

  1.  Take a kadai, pan, or skillet.
  2.  Then, add enough oil for deep frying the chicken lollipops.
  3.  Then, turn on the flame and heat the oil on a medium to high heat.
  4.  When oil is hot, add the marinated chicken lollipops one by one in hot oil, do not overcrowd the pan.
  5.  Then, deep fry the chicken lollipops on a medium flame for 4-5 minutes or until chicken is well cooked, crispy from outside, and juicy from inside and golden brown in colour.  Keep stirring.
  6.  Then, transfer the fried chicken lollipop onto a plate and repeat the same with balanced marinated chicken lollipops.
  7.  Then, turn off the flame and keep the fried chicken lollipops aside for later use.
  8.  These fried lollipops can also be eaten at this stage with tomato ketchup, chutney, or any sauces of your choice.

Making Sauce for Chicken Lollipops/Drums of Heaven:

  1.  Take a wok or a pan and heat on a high flame.
  2.  When wok is hot, add 1 tablespoon of sesame oil/cooking oil/olive oil.
  3.  When oil is hot, add the chopped ginger, garlic, and chopped green chillies to taste and saute for 10-15 seconds on a high flame.
  4.  Then, add on the finely chopped onions and saute on a high flame until it turns translucent.
  5.  Then, add 2-3 tablespoons of Schezwan sauce, 1 tablespoon of dark soy sauce, 1/2 tablespoon of white vinegar, sugar, salt to taste, and 1-2 tablespoons of tomato ketchup and mix well.
  6.  Then, cook the sauces on a high flame for a minute.
  7.  Then, take a small bowl and add 1/2 tablespoon of corn starch and 2-3 tablespoons of water or as required to make a corn starch slurry and mix well.  Make sure there are no lumps.
  8.  Then, add the corn starch slurry and mix well.
  9.  Then, cook the sauce on a medium to high flame for 1-2 minutes or until the sauce is thick and smooth.
  10.  Then, add on the fried chicken lollipops and coat the fried chicken lollipops with the sauce nicely.
  11.  Then, increase the flame and cook the fried chicken lollipops with the sauce for a minute.
  12.  Then, turn off the flame and add some chopped spring onion greens and mix well.
  13.  Then, serve this chicken lollipops hot with any sauce of your choice.
