Marination of Chicken for Chicken Pakora:

  1.  Take a mixing bowl and add on the cleaned chicken pieces.
  2.  Then, add salt to taste, garlic ginger paste, turmeric powder, red chilli powder to taste, garam masala, cumin powder, coriander powder, 1-2 tablespoon of cooking oil and lemon juice and mix well.
  3.  Then, keep this marinated chicken aside for at least 30 minutes.
  4.  Then, add besan (gram flour), 2 tablespoons of chawal ka atta (rice flour), chopped green chillies to taste, chopped curry leaves, chopped coriander leaves, break in 1 egg, and salt to taste (remember in first marination, we have added salt, so adjust accordingly).
  5.  Then, mix all the ingredients well and then cover the marinated chicken and keep in the fridge for at least 1-2 hours or if you have time you can keep the marinated chicken in the fridge for 6-7 hours.

Deep Frying of Chicken Pakora:

  1.  Take a kadai or pan and add enough oil to deep fry the chicken pieces.
  2.  Then, turn on the flame and heat the oil on high flame.
  3.  When oil is hot, add on the marinated chicken pieces one by one, do not overcrowd the pan.
  4.  Then, fry the chicken on a low to medium flame for 8-10 minutes or until chicken is well cooked.  Keep stirring so that the chicken is evenly cooked, crispy, and light golden in colour.
  5.  Then, transfer the chicken pakora onto a plate and repeat the same with the remaining marinated chicken.
  6.  Serve this chicken pakora hot with any chutney or sauce.
