About Chilli Chicken:
Chilli chicken is a popular non-vegetarian Indo-Chinese dish. Chilli chicken is a spicy, sweet and sour crispy appetizer made with boneless chicken, bell peppers, garlic, chilli sauce, soya sauce, and spices. Chilli chicken is a dry starter or an appetizer. This is a very famous Indo-Chinese recipe in India.
Ingredients:
- 300-400 grams of boneless chicken cleaned, washed, and cut into bite size cubes.
- 1/2 tablespoon garlic ginger paste.
- 1/2 teaspoon red chilli powder or to taste.
- Salt to taste.
- 2-3 tablespoons of refined flour (maida).
- 2 tablespoons of corn flour for marination of the chicken+1 teaspoon for the slurry .
- 1 egg.
- 2 tablespoons of dark soya sauce.
- 1 teaspoon white vinegar.
- 1-2 tablespoon tomato ketchup.
- 2-3 tablespoons of red chilli sauce or to taste.
- Chopped green chillies or dry red chillies to taste.
- Cooking oil for deep frying of the chicken and to make chilli chicken.
- 6-7 garlic cloves finely chopped.
- 1-inch ginger finely chopped.
- 1 green bell pepper diced (you can use tri-colour bell peppers).
- Black pepper powder to taste.
- 1/2 teaspoon sugar or to taste.
- Some chopped spring onions.
- Some onion petals.
Note: You may increase or decrease the quantity of ingredients depending on your taste and for how many people you are making for.
Marination of Chicken:
- Take a mixing bowl and add on the cleaned chicken pieces.
- Then, add black pepper powder to taste, salt to taste, red chilli powder to taste, garlic ginger paste, 1 tablespoon soya sauce, 2 tablespoons of refined flour, 2 tablespoons of corn flour, and break in 1 egg.
- Then, mix all the ingredients well and keep aside for 30-40 minutes.
Deep Frying of Marinated Chicken Pieces:
- Take a kadai and add enough oil to deep fry the chicken pieces.
- Then, turn on the flame and heat the oil on a high heat.
- When oil is hot, add the marinated chicken pieces one by one and fry on a medium flame for 5-7 minutes or until chicken is well cooked. Keep stirring so that chicken is cooked evenly and crispy. Do not overcrowd the kadai.
- Then, transfer the fried chicken onto a plate and keep aside for later use.
- Repeat the same process with the remaining marinated chicken.
Method of Making Chilli Chicken:
- Take a small mixing bowl and add 1 teaspoon of corn flour and 2-3 tablespoons of water.
- Then, mix them well and make sure there are no lumps and keep the slurry aside for later use.
- Then, take a wok or a pan and heat on a high heat.
- When pan is hot, add 1 tablespoon of cooking oil.
- When oil is hot, add chopped garlic, ginger, and green chillies to taste and saute for 30 seconds on a high heat, do not brown the garlic.
- Then, add diced bell peppers and onion petals and saute on a high flame for 1-2 minutes.
- Then, add 1 tablespoon of dark soya sauce, 1-2 tablespoons of tomato ketchup and red chilli sauce to taste and mix well.
- Then, add 1 teaspoon white vinegar and 1/2 teaspoon sugar or to taste and mix well.
- Then, add the corn flour slurry and mix well.
- Then, add salt to taste and mix well.
- Then, cook the sauce for 1-2 minutes on a medium to high flame or until sauce becomes thick.
- Then, add fried chicken pieces and coat them with the sauce nicely and saute on a high flame for 1-2 minutes.
- Then, add some spring onion greens and mix well.
- Then, turn off the flame and transfer the chilli chicken onto a serving plate and serve hot.
