How to Make Chilli Chicken at Home

About Chilli Chicken:

Chilli chicken is a popular non-vegetarian Indo-Chinese dish.  Chilli chicken is a spicy, sweet and sour crispy appetizer made with boneless chicken, bell peppers, garlic, chilli sauce, soya sauce, and spices.  Chilli chicken is a dry starter or an appetizer.  This is a very famous Indo-Chinese recipe in India.

Ingredients:

  • 300-400 grams of boneless chicken cleaned, washed, and cut into bite size cubes.
  • 1/2 tablespoon garlic ginger paste.
  • 1/2 teaspoon red chilli powder or to taste.
  • Salt to taste.
  • 2-3 tablespoons of refined flour (maida).
  • 2 tablespoons of corn flour for marination of the chicken+1 teaspoon for the slurry .
  • 1 egg.
  • 2 tablespoons of dark soya sauce.
  • 1 teaspoon white vinegar.
  • 1-2 tablespoon tomato ketchup.
  • 2-3 tablespoons of red chilli sauce or to taste.
  • Chopped green chillies or dry red chillies to taste.
  • Cooking oil for deep frying of the chicken and to make chilli chicken.
  • 6-7 garlic cloves finely chopped.
  • 1-inch ginger finely chopped.
  • 1 green bell pepper diced (you can use tri-colour bell peppers).
  • Black pepper powder to taste.
  • 1/2 teaspoon sugar or to taste.
  • Some chopped spring onions.
  • Some onion petals.

Note:  You may increase or decrease the quantity of ingredients depending on your taste and for how many people you are making for.

Marination of Chicken:

  1.  Take a mixing bowl and add on the cleaned chicken pieces.
  2.  Then, add black pepper powder to taste, salt to taste, red chilli powder to taste, garlic ginger paste, 1 tablespoon soya sauce, 2 tablespoons of refined flour, 2 tablespoons of corn flour, and break in 1 egg.
  3.  Then, mix all the ingredients well and keep aside for 30-40 minutes.

Deep Frying of Marinated Chicken Pieces:

  1.  Take a kadai and add enough oil to deep fry the chicken pieces.
  2.  Then, turn on the flame and heat the oil on a high heat.
  3.  When oil is hot, add the marinated chicken pieces one by one and fry on a medium flame for 5-7 minutes or until chicken is well cooked.  Keep stirring so that chicken is cooked evenly and crispy.  Do not overcrowd the kadai.
  4.  Then, transfer the fried chicken onto a plate and keep aside for later use.
  5.  Repeat the same process with the remaining marinated chicken.

Method of Making Chilli Chicken:

  1.  Take a small mixing bowl and add 1 teaspoon of corn flour and 2-3 tablespoons of water.
  2.  Then, mix them well and make sure there are no lumps and keep the slurry aside for later use.
  3.  Then, take a wok or a pan and heat on a high heat.
  4.  When pan is hot, add 1 tablespoon of cooking oil.
  5.  When oil is hot, add chopped garlic, ginger, and green chillies to taste and saute for 30 seconds on a high heat, do not brown the garlic.
  6.  Then, add diced bell peppers and onion petals and saute on a high flame for 1-2 minutes.
  7.  Then, add 1 tablespoon of dark soya sauce, 1-2 tablespoons of tomato ketchup and red chilli sauce to taste and mix well.
  8.  Then, add 1 teaspoon white vinegar and 1/2 teaspoon sugar or to taste and mix well.
  9.  Then, add the corn flour slurry and mix well.
  10.  Then, add salt to taste and mix well.
  11.  Then, cook the sauce for 1-2 minutes on a medium to high flame or until sauce becomes thick.
  12.  Then, add fried chicken pieces and coat them with the sauce nicely and saute on a high flame for 1-2 minutes.
  13.  Then, add some spring onion greens and mix well.
  14.  Then, turn off the flame and transfer the chilli chicken onto a serving plate and serve hot.
