How to Make Egg Fried Rice at Home

About Egg Fried Rice:

Egg fried rice is an easy and tasty Indo-Chinese rice recipe that goes well with chili chicken, Gobi Manchurian, or with simple tomato ketchup.  This egg fried rice is perfect for lunch or dinner, which can be made within 30 minutes.  This egg fried rice is prepared with cooked rice, scrambled eggs, finely chopped vegetables, garlic, ginger, and sauces.  This is a non-vegetarian recipe.

Ingredients:

  • 1 cup of long grain basmati rice.
  • 4 eggs.
  • Some finely chopped spring onion greens.
  • Some finely chopped spring onion whites.
  • 4-5 garlic cloves finely chopped.
  • 1/2 tablespoon finely chopped ginger.
  • Some finely chopped green chillies to taste.
  • 1 medium sized carrot finely chopped.
  • Freshly grounded black pepper powder to taste.
  • 1 small green capsicum finely chopped.
  • 2 tablespoons cooking oil+1 teaspoon of cooking oil.
  • 1-1/2 teaspoons of dark soya sauce.
  • 1 teaspoon white vinegar.
  • Salt to taste.
  • Water as required to boil the rice.

Note:  You may increase or decrease the quantity of ingredients depending on your taste and for how many people you are making for.

Cooking of Rice:

  1.  Wash the rice 3-4 times and then soak the rice for 15-20 minutes.
  2.  After 20 minutes, drain all the water from the rice and keep aside.
  3.  Take a deep heavy bottom pan and add required amount of water to cook the rice.
  4.  Turn on the flame and let the water come to a boil.
  5.  When water comes to a boil, add salt to taste and 1 teaspoon of cooking oil.
  6.  Add the soaked long grain basmati rice and cook it on a medium to high flame for 7-8 minutes or until rice is well-cooked.
  7.  When rice is well-cooked, turn off the flame and drain all the water from the rice and keep aside for later use.

Method of Making Egg Fried Rice:

  1.  Break the eggs into a bowl and whisk well.
  2.  Take a wok or a pan and turn on the flame.
  3.  When pan is hot, add 1 tablespoon of cooking oil.
  4.  When oil is hot, add whisked eggs, salt to taste, and freshly grounded black pepper powder to taste and then scramble the eggs on a medium flame, it may take approximately 1-2 minutes.
  5.  Transfer the scrambled eggs into a plate and keep aside for later use.
  6.  In the same pan, add 1 tablespoon of cooking oil.
  7.  When oil is hot, add chopped garlic, ginger, and green chillies and saute them on a high flame for 10-20 seconds, do not brown the garlic.
  8.  Add chopped spring onion whites, chopped carrot, chopped capsicum and mix well.
  9.  Saute the vegetables on a high flame for 1-2 minutes.
  10.  Add scrambles eggs, black pepper powder to taste, salt to taste, soya sauce, and vinegar and mix all the ingredients well and fry them for a minute on a high flame.
  11.  Add cooked rice and spring onion greens and mix well.
  12.  Fry the rice on a high flame for 1-2 minutes, check for seasoning and adjust accordingly.
  13.  Turn off the flame and transfer the egg fried rice into a serving bowl and serve hot with chilli chicken, Gobi Manchurian, or with tomato ketchup.
