About Matka Kulfi:
Matka Kulfi is an Indian style ice cream served in earthen pots. This is a very easy and quick matka kulfi recipe, which is perfect for hot summer. This is a vegetarian recipe.
Ingredients:
- 4 cups of full fat milk.
- 1 cup of fresh cream.
- 4 tablespoons of grated khoya/milk powder.
- Some saffron strands.
- 6-7 almonds finely chopped.
- 8-10 cashew nuts finely chopped.
- Some pistachios finely chopped.
- 1/3rd cup of sugar or to taste.
- 1/2 teaspoon green cardamom powder.
Note: You may increase or decrease the quantity of ingredients depending on your taste and for how many people you are making for.
Method of Making Matka Kulfi:
- Take a large heavy bottom kadai or a sauce pan and add the milk.
- Turn on the flame and let the milk come to a boil on a low to medium flame by stirring occasionally.
- Simmer the milk for 10 minutes or until milk reduces to one half by stirring occasionally.
- Add sugar and mix well until sugar dissolves.
- Add chopped cashew nuts, almonds, and pistachio and mix well.
- Simmer the milk for another 10-15 minutes or until milk reduces to 1/3rd by stirring occasionally.
- Add fresh cream/malai and khoya and mix well making sure there are no lumps.
- Add saffron strands and cardamom powder and mix well.
- Let the mixture come to a boil on a low flame.
- When mixture comes to a boil, turn off the flame and let the mixture come to room temperature.
- When mixture comes to room temperature, transfer the mixture into small matkas or cups.
- Cover the matka with cling wrap or aluminium foil and freeze for 7-8 hours or until set.
- Garnish the matka kulfi with chopped nuts and serve chilled.
