How to Make Matka Kulfi at Home

About Matka Kulfi:

Matka Kulfi is an Indian style ice cream served in earthen pots.  This is a very easy and quick matka kulfi recipe, which is perfect for hot summer.  This is a vegetarian recipe.

Ingredients:

  • 4 cups of full fat milk.
  • 1 cup of fresh cream.
  • 4 tablespoons of grated khoya/milk powder.
  • Some saffron strands.
  • 6-7 almonds finely chopped.
  • 8-10 cashew nuts finely chopped.
  • Some pistachios finely chopped.
  • 1/3rd cup of sugar or to taste.
  • 1/2 teaspoon green cardamom powder.

Note:  You may increase or decrease the quantity of ingredients depending on your taste and for how many people you are making for.

Method of Making Matka Kulfi:

  1.  Take a large heavy bottom kadai or a sauce pan and add the milk.
  2.  Turn on the flame and let the milk come to a boil on a low to medium flame by stirring occasionally.
  3.  Simmer the milk for 10 minutes or until milk reduces to one half by stirring occasionally.
  4.  Add sugar and mix well until sugar dissolves.
  5.  Add chopped cashew nuts, almonds, and pistachio and mix well.
  6.  Simmer the milk for another 10-15 minutes or until milk reduces to 1/3rd by stirring occasionally.
  7.  Add fresh cream/malai and khoya and mix well making sure there are no lumps.
  8.  Add saffron strands and cardamom powder and mix well.
  9.  Let the mixture come to a boil on a low flame.
  10.  When mixture comes to a boil, turn off the flame and let the mixture come to room temperature.
  11.  When mixture comes to room temperature, transfer the mixture into small matkas or cups.
  12.  Cover the matka with cling wrap or aluminium foil and freeze for 7-8 hours or until set.
  13.  Garnish the matka kulfi with chopped nuts and serve chilled.
