How to Make Odia Style Aloo Dum at Home

About Odia Style Aloo Dum:

Odia style aloo dum is a very delicious, mildly spiced semi-gravy potato curry made with boiled potatoes, garlic ginger paste, onions, tomatoes, whole and powdered spices, and herbs.  This goes very well with steamed rice, roti, paratha, poori, or with dahi bara.  This is a very easy and quick Odisha style aloo dum recipe.  There are many ways to make aloo dum, but here I am sharing how I used to make for my family.  This is a vegetarian recipe.

Ingredients:

  • 4-5 medium sized boiled potatoes peeled and cut into big size cubes or any shape.
  • 2 medium sized onions finely chopped.
  • 2 medium sized tomatoes finely chopped.
  • 1 bay leaf.
  • 2-3 tablespoons of mustard oil or any kind of cooking oil.
  • 1/2 teaspoon cumin seeds.
  • 1 cinnamon stick.
  • 2 whole dry red chillies.
  • 1 tablespoon garlic ginger paste.
  • 1/2 teaspoon turmeric powder.
  • Red chilli powder to taste.
  • 2 teaspoons of coriander powder.
  • 1/2 teaspoon cumin powder.
  • 1/2 teaspoon garam masala.
  • Salt to taste.
  • Water as required to make gravy.
  • Some finely chopped coriander leaves.
  • 1/4th teaspoon sugar.

Note:  You may increase or decrease the quantity of ingredients depending on your taste and for how many people you are making for.

Method of Making Odia Style Aloo Dum:

  1.  Take a kadai and turn on the flame.
  2.  When kadai is hot, add 2-3 tablespoons of mustard oil or any kind of cooking oil.
  3.  When oil is hot, add 1/4th teaspoon sugar and let the sugar to turn brown.
  4.  Add whole dry red chillies, bay leaf, and cinnamon stick and saute on a low flame for 10-20 seconds.
  5.  Add cumin seeds and let the cumin seeds to splutter.
  6.  Add finely chopped onions and saute on a medium to high flame until onion turns golden brown in colour.
  7.  Add garlic ginger paste and saute on a low flame for 2-3 minutes or until raw flavour of the garlic ginger is gone.
  8.  Add finely chopped tomatoes, salt to taste and turmeric powder and mix well.
  9.  Cover the lid and cook the tomatoes on a low to medium flame until tomatoes are soft and mushy by stirring occasionally.
  10.  Add red chilli powder to taste, coriander powder, and cumin powder and mix well,
  11.  Cook the masala on a low to medium flame for 7-8 minutes or until masala is well cooked and oil gets separated from the masala.
  12.  Add cubed boiled potatoes and mix well with the masala.
  13.  Cover the lid and cook the potatoes with the masala on a low to medium flame for 4-5 minutes.  Stir occasionally.
  14.  Add water as required and mix well.
  15.  Increase the flame and let the water come to a boil.
  16.  When water comes to a boil, cover the lid and simmer the curry for 10-12 minutes.  Stir occasionally.
  17.  Add garam masala and finely chopped coriander leaves and mix well.
  18.  Cover the lid and cook the curry on a low flame for 2-3 minutes.
  19.  Turn off the flame and transfer the aloo dum into a serving bowl and serve hot with roti, paratha, steamed rice, poori, or with dahi bara.
