How to Make Roasted Chicken Salad at Home

About Roasted Chicken Salad:

This is a very simple, tasty, and healthy chicken salad recipe, which is made with roasted chicken, various fresh vegetables, and seasoned with salt, black peeper, lemon juice and herb.  This is a very healthy salad recipe, which you can be serve at lunch or at dinner time.

Benefits of Chicken:

Ingredients:

  • 200 grams of chicken breast or boneless chicken.
  • 2 tablespoons of lemon juice.
  • 1 medium sized tomato finely chopped.
  • 1 medium sized carrot finely chopped.
  • 1 medium sized cucumber finely chopped.
  • 1 medium sized onion finely chopped.
  • Salt to taste.
  • 1-2 tablespoons of olive oil or any kind of cooking oil.
  • Crushed black pepper to taste.
  • 1/2 cup shredded cabbage.
  • 1 green capsicum finely chopped.
  • Chopped lettuce leaves as needed.
  • Finely chopped green onions.
  • 1/2 tablespoons of garlic ginger paste.
  • Finely chopped green chilies to taste (optional).
  • Finely chopped coriander leaves.

Note:  You may increase or decrease the quantity of ingredients depending on for how many people you are making for.

Marination of Chicken:

  1.  Take a mixing bowl and add the chicken pieces.
  2.  Then, add salt to taste, crushed black pepper to taste, 1 tablespoon lemon juice, and 1/2 tablespoon garlic ginger paste and mix them well.
  3.  Then, cover the bowl and keep the chicken marination in the fridge for 30 minutes or if you have time you can keep overnight in the fridge.

Roasting the Chicken:

  1.  Take a frying pan and turn on the flame.
  2.  When pan is hot, add 1-2 tablespoons of olive oil or any kind of cooking oil.
  3.  When oil is hot, add the marinated chicken and cook on a low to medium flame for 10-15 minutes or until its well-cooked and tender.
  4.  Then, keep the roasted chicken aside until it cools down.
  5.  Then, cut the chicken pieces into a small bite size and keep aside for later use.

Salad Dressing:

  1.  Take a small bowl and add 2-3 tablespoons of thick yogurt, 1 tablespoons of lemon juice, crushed black pepper to taste, and salt to taste.
  2.  Then, mix them well and keep aside for later use.

Preparation of Salad:

  1.  Take a mixing bowl and add all chopped vegetables, chopped green chilies to taste, and coriander leaves.
  2.  Then, add roasted chicken pieces.
  3.  Then, pour the salad dressing over it.
  4.  Then, combine them all together until all vegetables and chicken well coated with salad dressing.
  5.  Serve this healthy chicken salad immediately or cover and keep in the fridge for 1 hour and serve chilled.
